3 Days Hands-on Training Workshop on Meat Analogues by Twin-Screw Extrusion Technology and Productization

Workshop Overview:

From our food extrusion workshop series, we came up with an on-demand workshop on meat analogues and productization. This workshop will give the participants an understanding of how twin-screw extrusion technology can be used to transform plant proteins into meat analogues. Extrusion trials include the manufacture of both dry TVP and high moisture meat analogue (HMMA) by using a pilot plant twin screw extruder (Brabender TwinLab F-20/40). This workshop focuses on the concepts of screw design, extruder setup, formulations, process optimization, product development, etc. This exclusive workshop is designed to give participants hands-on experience with the extruder as well as the ability to design a variety of plant-based meats.

Tentative Program*

Day 1 (17.10.2022)

  • 9.30 to 10.00: Check-in
  • 10:00 to 10:30: Introductions and Safety Rules for Pilot Plant – Gurmeet Singh
  • 10:30 to 11:00: Introduction to the Dry Extrusion of Plant Proteins (Dry TVP) – Gurmeet Singh
  • 11:00 to 13:00: Setting up the extruder for Dry TVP: Configuring the screw, Setting up of an extruder, Feed rate calibration, Die & cutting device assembly installation – Abdul Mateen
  • 13:00 to 14:00: Group Photograph & Lunch – Suganthi
  • 14:00 to 16:00: Manufacturing of Dry TVP using Soy Protein: Setting process parameters & running the extruder, sample collection – Abdul Mateen
  • 16:00 to 17:00: Opening the extruder: visual examination of internals and cleaning  – Abdul Mateen

Day 2 (18.10.2022)

  • 10:00 to 10:30: Introduction to the High Moisture Meat Analogue (HMMA) Day – Gurmeet Singh
  • 10:30 to 13:00: Setting Up Extruder for HMMA Manufacture: Configuring the screw, Setting up an extruder, Feed rate calibration, Cooling die assembly – Abdul Mateen
  • 13:00 to 14:00: Lunch – Suganthi
  • 14:00 to 16:00: Manufacturing of HMMA: The group will work in teams. Each team will work with a different protein blend. Products will be collected by the respective teams & stored for productization trials on Day 3 – Abdul Mateen
  • 16:00 to 17:00: Opening the extruder: visual examination of internals and cleaning – Abdul Mateen

Day 3 (19.10.2022)

  • 10:00 to 10:30: Introduction to Productization – Gurmeet Singh
  • 10:30 to 13:00: Ingredients consideration, Mincing, Preparation of emulsion, Process steps – Abdul Mateen
  • 13:00 to 14:00: Lunch – Suganthi
  • 14:00 to 16:00: Productization: Converting to products like Burger patty and nuggets, Tasting session – Abdul Mateen
  • 16:00 to 16:30: Certificate Distribution & Closing Remarks – Gurmeet Singh
